Ingredients
Modern Hi Fibre Brown Bread – 10 slices
Butter, melted – 2 Tbsp
Bananas, ripe – 2
Sweet condensed milk – 100g
Sugar, powdered – 75g
Eggs – 3
Milk -200mL
Baking Soda – 1 tsp
Baking Powder – 1 tsp
Raisins – 1/4th cup
Method
Preheat the oven to 180 C.
Chop the breads into small pieces
Mash the bananas into a fine mixture. Do not overbeat.
Whisk the eggs in the mixing bowl and then add sugar in thirds so that it looks fluffy till the mixture looks fluffy.
Slowly add in the condensed milk while whisking.
Once uniformly mixed, pour in the milk and keep whisking slowly.
Add the baking soda and baking powder. Give the mixture a quick whisk.
Now add in vanilla essence, mashed bananas and mix it well.
At the end, add the bread pieces and mix gently. Let the bread pieces soak in the moisture. Once they do add in the butter and mix gently.
Grease a cake tin with butter and add the cake mix to the tin. Top off with raisins on top. Tap the tin on the counter twice to knock out any air bubbles.
Bake for 30 minutes.
Take a toothpick and insert into the cake. If it comes out clean, your cake is done. If not, let it bake for another 5 minutes at the most.
Let your cake cool down for 15 minutes
Run a knife around the cake to separate it from the tin. Once done, turn it upside down.
